Aero Mint Chocolate Brownies; intensely fudgy and chocolatey brownies made with three kinds of chocolate and the flavour of fresh mint, studded with everyone’s favourite bubbly bar!
Blue Monday, the “worst day of the year” we’re told. Either that oranother marketing opportunity to sell you stuff, or shove free Aero Mint Chocolate Brownies recipes in your face? Nah,not my style…
Irrespective of the date, I thrust upon you this incredibly delicious recipe that you will most definitely need to eat more than 1/16th of.
In my ongoing quest to berate the January diet trend, I give you another wonderful brownie recipe. Dense, fudgy, deeply chocolatey and rich enough to banish all other brownies from your memory, I could allow for nothing less. These brownies are made with refined flour, refined sugar, butter and chocolate with less than 70% cocoa, and guess what? No one died, they tasted delicious, and the world kept on turning! Don’t fear food or buy into the health trends, lovely readers, someone gets paid big bucks when you do! Eat. What. You. Want.
Unlike past brownie recipes, this one has been jazzed up with a little fresh mint flavour, making these velvety soft brownies rich and refreshing at the same time. Of course, it only felt right to throw some chunks of something in there, I feel I’m not posh enough for After Eights, so the classic Aero Mint bar did the trick just fine! The vibrant green of the Aero bar survives the onslaught of the oven, leaving a lovely burst of colour on the surface of these darkly tempting treats. The “clean eating” brigade want you to eat more green food? Done.
I first made these brownies a few months ago to test out on my workmates, and as I’d hoped, they went down very well. I hope if you try them out that you’ll have the same success, and enjoy the unadulterated pleasure that these Aero Mint Chocolate Brownies bestow on us mere humans!
To make these minty little beauties, you’ll need to start by preheating your oven.
You’ll then need to grease and line a tin to bake the brownies in, both 8×8 or 8×12 inch tins have worked well for me.
Chop up some butter and dark/milk chocolate and melt together gently in a heatproof bowl either in the microwave or over a pan of simmering water until smooth.
While the chocolate and butter melt, weigh some flour and cocoa powder into a small bowl and mix together.
Chop up some mint Aero bars or bubble into small chunks, pop half of the chunks straight into the bowl with the flour and cocoa mixture and set aside.
In a large bowl, whisk together eggs, an egg yolk, sugar, mint extract and a little salt until just combined.
Once melted, pour the butter/chocolate mixture into the bowl of egg mixture and whisk to incorporate.
Tip in the flour and cocoa mixture and your mint Aero chunks and gently fold together with a spoon or spatula until just combined.
Pour the brownie batter into the prepared tin, and press some more chopped up chunks of Aero Mint into the top of the batter.
Bake for 45-55 minutes until the brownies are no longer wobbly and have a nice shiny, crackled top. If you prefer a more gooey brownie, 40-45 would be enough!
Allow to cool for at least 45 minutes before slicing if you can, speaking from experience it can become a sticky mess otherwise! You can slice these into anything from 16-20 bars, depending on how much chocolate you need in your face at one time. I’m not going to judge.
If you can’t find or don’t want to use Aero Mint bars, why not try regular Aero or another minty or orangey flavoured chocolate? These brownies go with just about any sweet flavour!

BE A MAVERICK: Why not try this with another minty chocolate like After Eights or Matchmakers?
MAKE IT GLUTEN FREE: Simply replace the flour with a plain gluten free flour blend!
These Aero Mint Chocolate Brownies will keep well in an airtight container or on a covered cake stand for up to 4 days. No need to refrigerate unless you like your brownies cold!
Ingredients
- 250g (8 ½ oz) dark or milk chocolate
- 230g (15 tbsp) butter
- 65g (½ cup) plain flour
- 60g (½ cup) cocoa powder
- 150g (5 oz) Aero mint bar, Aero mint bubbles, or your favourite mint chocolate
- 3 eggs
- 250g (2 ¼ cups) caster sugar
- 1-2 tsp peppermint extract (depending on how minty you like it!)
- Pinch of salt
Instructions
- Preheat your oven - 160°C / 140°C fan / 325°F / gas mark 3.
- Grease and line a tin to bake the brownies in, both 20x20cm (8x8in) or 20x30cm (8x12in) tins have worked well for me.
- Chop up your butter and dark/milk chocolate and melt together gently in a heatproof bowl either in the microwave or over a pan of simmering water until smooth.
- While the chocolate and butter melt, weigh your flour and cocoa powder into a small bowl.
- Chop your mint Aero bar or bubble into small chunks, pop half of them into the bowl with the flour and cocoa mixture and set aside.
- In a large bowl, whisk together the eggs, sugar, mint extract and salt until just combined.
- Once melted, pour the butter/chocolate mixture into the bowl of egg mixture and whisk to incorporate.
- Tip in the flour and cocoa mixture and your mint Aero chunks and gently fold together with a spoon or spatula until just combined.
- Pour the brownie batter into the prepared tin, sprinkle over the remaining chunks of Aero.
- Bake for 45-55 minutes until the brownies are no longer wobbly and have a nice shiny, crackled top.
- Allow to cool for at least 45 minutes before slicing if you can. (This isn't a quick bake, but it's so worth it!)
- Enjoy!
